Bright Jalapeño Pomodoro

Ingredients

  • 1 can (28 oz) whole San Marzano tomatoes, crushed by hand
  • ½ medium yellow onion, finely diced, (about ¼ inch)
  • ¼ cup Bright Jalapeño extra virgin olive oil, divided
  • 1 teaspoon salt

Directions

  1. Warm half of the olive oil in a wide saucepan over medium-low heat. Add the onion and cook, stirring occasionally, for 6 to 8 minutes, until soft and translucent but not browned.

  2. Add the crushed tomatoes and a pinch of the salt. Stir and bring to a gentle simmer.

  3. Simmer uncovered for 25 to 30 minutes, stirring now and then, until the sauce thickens and turns glossy.

  4. Take the pan off the heat and stir in the remaining olive oil. Taste and adjust with the rest of the salt. Toss with pasta and serve.
