
What to Expect at Your First Tasting
Walking into a tasting room for the first time can feel a little intimidating, like you’re supposed to already know what you’re looking for. You’re not. That’s exactly what the tasting is for.
How It Works
You won’t find a row of bottles lined up on our counter. Our oils and balsamics live in fusti or cruets, keeping everything fresh and ready to pour.
We’ll start you off with a piece of bread, plain, no oil yet. From there, you’ll move through the room at your own pace, tasting as you go. First neat, just a small pour, a slight swirl, a breath in before you sip, so you can taste the oil exactly as it is. Then with the bread, to see how it behaves on something you’d actually eat it with. A pinch of salt at the end changes things again, it’s worth trying an oil all three ways before deciding what you think of it.
We also keep wine on hand, available by the glass. We’ll pour you a glass to sip while you taste, or you’re welcome to add a bottle onto your purchase on the way out.
From there, it’s about comparison. Tasting one oil rarely tells you much. Tasting a few side by side, maybe one from the Pantry Collection next to one from the Signature Estate Collection, is where the differences, peppery versus mild, everyday versus elevated, start to make sense.
Each oil and balsamic has its own flavor profile card alongside it, so you’re never guessing. Flavor notes, simple ways to use it, and even wine pairings, all right there if you want them. Read as much or as little as you’d like, the card will be waiting either way.
Getting to Know Our Collections
The Pantry Collection is built for everyday cooking, Tunisian olive oils infused with clean, vibrant flavor. The Signature Estate Collection is a different experience entirely, first harvest oil from a single Greek estate, cold-pressed alongside fresh herbs and fruit, naturally high in polyphenols. And the Finishing Collection is where our balsamics live, made in Modena, Italy, thick and layered, meant for that last touch on a dish rather than cooking with.
What We’re Listening For
We’re not looking for the “right” answer when we ask what you taste. We’re listening for what you gravitate toward, so we can point you to a few more pours in that same direction. Some people love a bold, peppery oil that bites a little on the finish. Others want something so mild it barely announces itself. Both are right, they’re just different.
Bring Some Bread
Nothing tells you more about an oil than tasting it plain on a piece of bread. We always have some on hand, but feel free to ask, it’s the easiest way to taste an oil the way you’d actually use it at home.
Come With Questions
Where does this come from. What pairs well with it. Is this one good for cooking or finishing. We’d genuinely rather answer five small questions than have you guess and pick the wrong bottle. That’s the whole point of stopping in.
